In my quest to find health and wellness through better nutrition, I’ve begun to cook a lot more and use organic and/or local grown food.  A few weeks ago, I planted my own herbs to use for cooking.  Yesterday, I pinched back and washed my basil.  Today I blended it with oil and froze it for winter use.  I decided that I should do that for all of my herbs.  Here’s my haul.

Lemon Thyme
Rosemary

 

Oregano

So…. now I have all of these herbs.  But to be honest, I’m not really sure what to do with them.  I mean, I put a little bit of lemon thyme in my lentil soup when I make it.  But did you see how much I had?  My mom says that marinading meat in rosemary is good.  But I’m going to need a lot of recipes, I think.

So, my question for you.  What is your favorite recipe that uses these herbs?  I know that pasta is the obvious choice with the oregano, but sadly, I don’t really eat pasta as it makes me fall asleep.  But I’d love to hear all of your recipes anyway!  Thank you in advance for sharing your recipes……

    Oregano goes well with any tomato paste type recipe. I used to love pasta, but since I am a diabetic, I can not eat much at all. Cindy found a paste substitute that is made from a Chinese root that has zero carbs. They have the same consistency but not as much taste. We sometimes mix this with a little whole wheat noodles for added flavor. I think when we had a German foreign exchange student we found out that Oregano is called Bonnenkraut in German and it is used in German Potato salad also.

    Rosemary and olive oil go good with any kind of fish. You’re missing the best herb of all, “dill”. Dill can be used as a replacement for salt and pepper. The German’s use it a lot in their cooking. With a name like “Kelts” it sounds like you have a little German in you, and I am surprised you didn’t include it. Use dill in omelets, with cucumbers in cucumber salad, or any salad for that matter, or as a replacement for pepper and salt. The Lemon thyme is also good with fish.

    • I LOVE dill. They just didn’t have any to grow my own when I bought the herbs. I did later buy some at the farmers market. Erin had to tell me which part of the leaf to use! I think that Cindy chimed in as well. I’m getting a lot more into cooking lately than I have been before. :)
